DRY:1/2 c Soy Flour1/3 c Freshly Ground Flaxseed3/4 c Whole Wheat Flour1 TBSP Cinnamon1/2 tsp Cardamom1/2 tsp allspice1/4 tsp Cloves1/2 tsp freshly ground Nutmeg1/2 tsp Baking Soda1 tsp Baking Powder1/2 tsp SaltWET:1 c grated zucchini1/4 c fat free sour cream1/4 c unsweetened applesauce1 1/2 tsp Ener-G egg replacer1 tsp freshly grated lemon rind1/2 tsp minced ginger1/2 c Splenda Brown Sugar Blend***********OTHER:1/2 cup raisins3 tsp turbinado sugar
Pam 8 x 4 x 2 loaf pan.
In a large bowl combine DRY ingredients.
In a separate bowl, combine WET ingredients.
Stir in raisins after WET well mixed.
Mix DRY into WET and stir until just combined.
Pour into loaf pan and bake at 350 for 60 minutes.
