golden potato salad

Ingredients
15 gold potatoes1 C. finely diced red onion2 oz. chopped pimentos1/3 C. dill pickle relish2 C. light mayonnaise4 hard boiled eggs chopped2 cans sliced olives4 tsp. yellow mustardfresh ground black pepper
Directions
Cook potatoes in a large pot with plenty of salt. Strain and let cool in colander until easy to handle. when potatoes are cool, dice them up and mix with all other ingredients in a mixing bowl. Refrigerate for a few hours to allow flavors to blend.
