Berry Breakfast Grain Salad

Ingredients

1 cup steel cut oats1 cup quinoa1 1/2 cup orange juice3 1/4 cup water3/4 cup plain greek yogurt2 tablespoon maple syrup1/4 cup orange juice1/2 teaspoon cinnamon3/4 cup raspberries3/4 cup blackberries3/4 cup strawberries, sliced2 clementines1/2 cup walnuts, chopped1/2 cup almonds, sliced
Add water and orange juice, bring to a boil
Add grains then cover and reduce to a simmer.
Cook until liquid is absorbed (about 15-20 minutes).
Remove from heat and spread grains out on a baking sheet to cool.
Once cooled, transfer grain mixture to a big bowl.
Add yogurt, maple syrup, cinnamon, 2nd listed orange juice and mix together.
Mix in nuts.
Fold in berries carefully so as not to break them.
Top with sprinkle of more nuts.
Serving Size: makes ~10 1-cup servings
