Ingredients
2 cans blackeyed peas1 can diced tomato with chili peppers(rotel)1/2 cup diced red or yellow pepper1/2 cup fine chopped cilantro1/3 cup fine diced onion1 small can chopped black olives1/4 cup lime juice1/2 t black pepper1/2 t garlic powder1 t ground cumin1 t dried oregano
Directions
drain and rinse black eyed peas
drain tomatos

add all ingredients and mix.

This also makes a great sandwich spread if you mash the black eyed peas before mixing with other ingredients.
