6 oz tortilla chips, crumbled.2 cups shredded white meat from roasted chickenOne 15.5 oz can garbanzo beans (drained)One 15.5 oz can kidney beans (drained)One 15.5 oz can canned corn (drained)1 8 oz can green chile sauce1 cup fresh (or jar) salsa1 cup chopped red onion (white is fine)1 can green chiles or 1 green pepper, chopped1/4 cup fresh cilantro leaves1 Tablespoon chopped garlic (from jar)1 TB chipotle Tabasco saucesalt & pepper to taste8 oz shredded cheddar (or mexican) cheese
Preheat oven to 350 degrees.
Line bottom of 8 x 11 baking pan with crushed chips
Combine chiken, beans, chile sauce, green chiles, corn, salsa, onion, cilantro and garlic. season with salt & pepper to taste. Spread mixture over chips & top wtih cheese
Serving Size: makes 8 1 cup servings
