Amish Baked Oatmeal

Ingredients
1-1/2 C. Oatmeal (quick cook recommended)1/3 C. Brown Sugar1/2 C. Milk (calculated w/1%)1/4 C. Smart Balance (Butter/Margarine) 1 egg1 tsp Vanilla1/3 Cup Raisins1 tbsp cinnamon1/8 C. Walnuts (optional-calculated with)
Directions
Combine dry ingredients first, melt butter and add with rest of liquid ingredients. Mix well. Spread in greased 9x13 pan, Bake @ 350 for 25-30 minutes.

    Smart Balance is a non-hydrogenated (non-dairy) "buttery spread".The light version.For 1 Tbsp it has 50 calories, 5g fat & 0 carbs.It's made with 39% natural vegetable oils (palm fruit, soybean,canola,flax seed and olive oil).It is recommended to use regular Smart Balance for baking.Hope this helps. - 1/29/08
