Ingredients
Directions
1 can white beans, drained and rinsed1 can low sodium black beans, drained and rinsed2 cans chunk light tuna in water, drained1/2 bag frozen yellow corn, thawed1 can black olives (I used small size)2 cups torn spinach leaves4 scallions, chopped (I use white and green parts)2 medium tomatoes, chopped and seeded3 mini cucumbers, peeled and chopped3 baby bell peppers, chopped1/2 cup light cesar dressing (I use Ken's)I also chopped a few raw mushrooms, only because I'm trying to learn new tastes/ textures (I usually love mushrooms smothered in butter lol)
Toss it all together! I ate my first portion right away, but what sits will soak up the dressing and taste pretty fabulous later on.
