Lara Bar Inspired Recipe

Ingredients
1/2 c. Pumpkin1/3 c Oats1/3 c. Cranberries, dried, sweetened (craisins)1 T Coconut (Shredded) 1/4 c. Dates, pitted & chopped2 oz Soy protein isolate1/2 tsp vanilla (more or less to taste)
Directions
Preheat oven to 350F.
Place all ingredients in food processor. Process until reached smooth consistency. Spread mixture onto the edge of a cookie sheet until it is about 1/4 inch in depth. Bear in mind if you use the standard size cookie sheet mixture will not cover entire pan. Bake for about 6 minutes. Allow to cool and then cut into 6 bars.
