I love this soup! I generally use ground turkey and chicken broth but otherwise it's the same. Yum! - 1/23/12

I will make it using a different cheese. I don't like Velveeta. I will try it with ground turkey or ham, also. - 9/24/11

I make this and sometimes substitute turkey ham for the ground beef....love it! - 9/24/11

I substituted beef broth for the water and boullion cubes, you can get salt free and fat free and it cuts the sodium of this recipe or you can not add the salt if I was using the bouillion, they have enough salt as it is. But it was a tasty dish for and we had it with a large green salad - 9/24/11

Why ruin a good stew with peppers? Ok, that is just my opinion 'cause I am allergic. Really, this stew sounds great once I get past those.... lol
I will try an adjusted version of it! Thanks. - 9/24/11

Good recipe, but for my family I eliminated the salt and used beef broth instead of beef boullion. - 7/19/11

It is good, but I substituted Ground Turkey. I don't know that beef would have been any better. - 7/18/11

I thought it was really good. My daughter had a nasty attitude about the name of it, but when she ate it, she went for seconds.
    I thought it was a nice change. - 9/16/09

This soup wasn't terrible, but I wouldn't bother making it again. Separated the minute I turned the heat off and didn't reheat well at all. - 3/11/08

MY family enjoyed this recipe. It is very different from the same ole same ole of everyday cooking. I used red bell peppers instead of green and I will use turkey next time. It is a very hearty and thick soup. Thanks! - 7/9/07

This recipe was OK. Next time I might substitute a different kind of cheese for the Velveeta that I used, however. - 3/13/07

After cooking and draining the beef, rinse it with water to get off even more fat. I do this every time I cook beef this way (sloppy joes, chili, etc.). - 9/25/11

Optional preparation: brown beef in soup pot (adds flavour), remove, drain. Cook soup in same pot without meat or cheese. Blend if planning to freeze. Add meat. Can freeze at this point. Heat, sprinkle shredded cheese on top. Serve. - 7/18/11
