Arugula Pesto Tuna Salad

Ingredients
1 cup of light tuna1 cup of arugula1/4 cup of pine nuts2 oz pecorino romano1/8 cup of olive oil1/4 cup of lemon juice1/8 cup of pumpkin seed9 Bagel Thins (Everything Thomas)1 cucumber (1 cup)1 cup of onion5 cups of tomato7-10 Basil leaves2 TBSP Low Fat Olive Oil Mayo ( I use the black pepper variety)
Directions
Blend oil, arugula, pine nuts, romano cheese, basil, 1/2 lemon juice, pumpkin seeds and 2-3 tbsp water. Blend until creamy. Mix pesto, mayo, tuna, cucumber, other 1/2 lemon juice, add salt and pepper to your liking. Scoop 1/4 cup of mixture onto a bagel thin, add sliced tomato and enjoy! P.s. put the rest in the fridge in a container, should last at least 3-4 days.

Serving Size: Makes 9 sandwiches with 1/4 cup tuna salad on each sandwich
