Grilled Lemon and Herb Crusted Tri Tip Roast

Ingredients
1 Tbs fresh rosemary, chopped1 Tbs fresh thyme, chopped1 Tbs Italian parsley, chopped1 Tbs kosher salt1/2 tsp black pepper2 Tbs olive oil1-1/2 lbs Tri tip roastLemon zest from 3 lemons
Directions
Mix all ingredients together except meat. Rub mixture on meat and marinate for at least 3 hours or up to 24 hours in refrigerator. Preheat grill to medium heat. Remove meat from the refrigerator 30 minutes before grilling. Place meat on grill and turn every 5 minutes, cooking approximately 45 minutes or until desired internal temperature is reached. Remove meat from grill and let ret for 15 minutes before slicing thinly across the grain.
