Vegetarian Yellow Curry with Tofu

Ingredients
2c zucchini2c yellow squash1/2 c onion1 block extra firm tofu1/2 c green pepper1/2 c red pepper2.5 tbs coconut oil4 tsp Mae Ploy yellow curry paste3 cup cooked brown rice
Directions
cook tofu with coconut oil til slightly brown
throw in zucchini and squash and onion til slightly soft
throw in peppers and curry paste, stir and cook for a bit
pour in coconut milk and let simmer for 5 minutes
serve over rice, and enjoy!
