Mushroom and Spinach Bowties

Ingredients
16oz Bowtie pasta3C fresh mushrooms, sliced4 medium whole ripe tomatoes, chopped2T extra virgin olive oil4T marsala cooking wine2tsp Italian seasoning1 medium onion, sliced1/4tsp crushed red pepper4C fresh spinach2 cloved minced garlicsalt to taste
Directions
Cook pasta according to package instructions.
Meanwhile, in a large skillet, warm olive oil. Add garlic, mushrooms, tomatoes, onion, italian seasoning, and crushed red pepper. Saute until mushrooms start to release their water. Add marsala cooking wine and allow to reduce the liquid further (approximately 5-8 minutes). Add spinach and cover pan to allow it to wilt. Drain pasta, reserving 1/2 cup of the starchy cooking liquid, and add to pan. Stir and then add cooking liquid to thicken up the sauce.
