Low Fat Oatmeal Muffins

Ingredients
4 cups oatmeal3 cups sour milk2 cups whole wheat flour1 cup brown sugar3 large eggs1/4 cup oil2 tsp baking soda1 tsp salt
Directions
Soak the oatmeal in the sour milk overnight.
Next day: Preheat overn to 425F. Add the remaining ingredients and beat thoroughly. Spoon into lightly greased muffin tins, two thirds full. Bake for 20-25 miutes or until a toothpick inserted in the middle comes out clean.
