Zucchini Pancakes

3-4 cups grated zucchini or yellow squash1/2 an onion grated1 tsp salt2 eggs1 tsp garlic powder1/4 cup flax meal1/4 cup parmesan cheese
Grate zucchini and onion and place in a colander over a bowl. Salt the grated vegetables and let it sit for an hour. Squeeze excess water from the grated vegetables.
Add eggs, garlic powder, plax, cheese and pepper.
Heat a non-stick pan on medium and spray with Pam.
Fry 2-3 tablespoons of batter until golden brown on both sides.
