Quinoa Corn salad

Ingredients
1c raw quinoa2c vegetable stock4 ears corn, roasted2T butter4oz cheddar cheese, shredded1/4c cilantro, choppedSalt and pepper to taste
Directions
Simmer quinoa in vegetable stock until tender and dry. Fluff with fork.

Roast corn and cut from cob.

Mix all ingredients.

Serve warm.
