Chicken Veggie Noodle Casserole

5 boneless skinless chicken breast1 cup chopped carrots1 cup chopped broccoli1 cup chopped bell peppers1 cup chopped onion1 can reduced fat cream of chicken soup2 cups whole wheat noodles1 cup low sodium chicken broth
Chop veggies and toss in large pot with chicken and broth. Bring to a boil, reduce heat to simmer and cover. Let cook 1 hour until chicken begins to fall apart. Shred or roughly chop chicken, add noodles to cook. You may add water if necessary. Cook noodles according to package direction. When noodles are almost cooked, add chicken soup, mix well and transfer to casserole. Bake in 350 oven for 30 minutes.
