Ingredients
1.5 onions, chopped3 cloves garlic, minced2 tsp olive oil3 large peppers: red, orange, yellow (skin removed)3 zucchini1 large eggplant0.5 c. Trader Joe's Organic Tomato SauceBasil, choppedSalt and Pepper to taste
Directions
Saute the onions in the oil. Add remaining ingredients, except for the basil. Cover and cook until vegetables are done. Add basil last.
