2 cups warm water3 1/2 tsp active dry yeast5 1/4 cups whole grain flour2 1/2 tsp salt2 tbsp white or apple cider vinegar1 cup seeds/nuts
In a large mixing bowl, dissolve the yeast in about .5 cup of the water.
Grease a 9x5" loaf pan
Sift the flour and salt into the bowl. Add all remaining ingredients and mix until a relatively smooth dough is formed.
Form the dough into a loaf shape that will fit end-to-end in your pan.
Lightly cover the loaf and let it rise in a warm, draft-free area for about an hour, or until doubled in size.
Preheat oven to 480*. Bake for 15 minutes and reduce heat to 390*. Bake for another 45 minutes.
Remove the loaf from pan and tap the bottom - if it sounds hollow, it's done. Otherwise, continue to cook.
