healthy chocolate oatmeal cookie

2 c. Oats1 c. natural peanut butter1/2 c Honey1/2 c coconut oil1/3 c organic unsweet coconut (optional)1/2 c mini chocolate chips1/4 c. chopped almonds (optional)1 tbsp. unsweet cocoa.I sometimes add craisins or different nuts depending on what I have on hand.
mix peanut butter, coconut oil, and honey over med heat until melted. Remove from heat. Mix in all other ingredients and stir until chocoalte chips are melted. Pour into a 9x13 nonstick pan and refrigerate until hard. Enjoy!
