Butternut squash soup

Ingredients
Butternut Squash (1 medium)Onions 2Potatoes 2 medium (pre cooked)Carrots 6 mediumLeek 1Vegetable stock cube (1)Mixed Herbs 1 tbspnSalt and pepper as required
Directions
Prepare all vegetables
Add 500 ml of Vegetable stock to saucepan, add in butternut squash, onions, carrots, mixed herbs, salt and pepper,
Bring to the boil, simmer for 30 mins, then add leeks, allow to simmer for another 20 mins
Add precooked potatoes at the end
Blend and put back on heat if needed.
Can be served immediately or left till following day
