Low Carb Cream of Mushroom Soup or gravy

Ingredients
Mushrooms, fresh, 3 cup piecesOnions, raw, 275 gramsGarlic, 8 tspHeavy Whipping Cream, 1 cup, fluid Chicken Broth, 1 cup (8 fl oz)Water, tap, 3 cup (8 fl ozButter, salted, 2 stickxantham gum (1 tbsp), 3 serving(may want to reduce this amount)salt and pepper to taste
Directions
melt butter, brown onions, add garlic to brown a couple more minutes. Add mushrooms, stirring occasionally till they are softened and reduced in size. Add broth, cream, and water. When at a gentle boil, add xantham gum. Be careful not to over thicken if you want soup. If you want gravy, use full 3 Tablespoons.
