Low Carb Strawberry Cheesecake for one

2 oz cream cheese1 egg1 packet Stevia1/2 tsp vanilla extract4 large strawberries, pureed or chopped up
In a small cereal bowl, microwave the cream cheese for @ 30 seconds - until soft.
With a fork, blend the egg into the soft cream cheese until mixed well. Then stir in the Stevia & vanilla extract.
Microwave for 1 minute.
Pour the strawberry puree over the center of the cheesecake.
Microwave for another 1.5-2 minutes.
Let cool for at least 5 minutes.
