Quinoa Spinach Goat Cheese Muffins

Ingredients
1/2 cup quinoa1 cup water4 eggs3 os spimach stemmed and chopped1 leek and some green part thinly sliced2 tbsp fresh oregano5 os soft goat cheesesalt and pepper to taste
Directions
In a small saucepan cook quinoa in water when boiling reduce heat cover and simmer 15 min or until all water is evaporated,
preheat oven to 350
in large bowl beat eggs, spinach oregano goat cheese,leeks and salt and peper Add quina and mix, Divide into 10 muffins cups greased. Bake ffor 15-20 min, or until set making ure spinache and leeks do not burn
