  • Number of Servings: 6
Ingredients
3 large eggs, separated1 pkg Splenda (1 tbsp)dash of saltpinch of cream of tartar3 ounces cream cheese (not Tbsp!) Do not soften!
Directions
Preheat oven to 300 degrees.

Separate the eggs and add Splenda, salt, and
cream cheese to the yolks. Use a mixer to
combine the ingredients together. In a separate
bowl, whip egg whites and cream of tartar until
stiff (if you're using the same mixer, mix the whites
first and then the yolk mixture).

Using a spatula, gradually fold the egg yolk
mixture into the white mixture, being careful not to
break down the whites.

Spray a cookie sheet with non-stick spray and
spoon the mixture onto the sheet, making 6
mounds.

Flatten each mound slightly.

Bake about 30 minutes (You want them slightly
softer, not crumbly).
Let cool on the sheet for a few minutes, and then
remove to a rack and allow them to cool.
Store them in a bread sack or a ziplock bag to
keep them from drying out.

Makes 6.

I really like these. I need to get better at making them, though. My first try was good, but flat. Going to keep trying, though. This is a great bread substitute and can be just about anything I want, depending on what spices I add. - 7/7/09

Theses were really good. I was skeptacle being that I tasted one plain and didn't like it, but as a sandwich, it was really good. I added a 1/2 tsp of baking powder to mine to make them a little puffier. - 6/22/09

When you think your egg whites are stiff, whip 'em some more! - 6/22/08

I made these yesterday. They weren't as tall as I'd hoped, but that was my fault. I didn't whip the egg whites stiff enough.
I used one for a sandwich. Delicious. I used another for French toast in the morning. Great!
    I'll be making a LOT of these. - 3/11/08
