6oz (225 gms) red Lentils1 x medium Leek1 x medium onion1 x bell pepper (green or red)2 x garlic glove (adjust for taste)1 tbsp dried parsley2 tsp vegetable boullion1 1/2 pints of water
Rinse and soak the lentils overnight with plenty of cold water. Boil in half the water until soft. Add all the other ingredients apart from the boullion and cook through for 10-15 minutes. Add the boullion according to taste. Blend and serve.
