chicken and Brown rice with vegetables

1 1/2 lbs skinless, boneless chicken breast Cubed3T Olive oil1 lg. onion coarsely chopped2t. salt1/2 t. pepper4 stalks of celery4 carrots4 gloves of garlic5 c. water1 C brown rice2 t. thyme1 1/2 t. sweet basil1 T parsley2 lbs. broccoli3 cayenne peppers2 t. cumin
Brown chicken in olive oil. Add onions, celery and salt, pepper and garlic. Add water, rice, and carrots. Bring to boil, then simmer for 30 minutes. Add Broccoli and spices. Serve with bread and corn on the cob and salad.
