4 small sweet potatoes, without salt, peeled8 cups prewashed mixed baby greens2 tsp ground cinnamon32 oz raw beef top round steak1/2 cup red wine vinegar1 tsp sea salt1 tsp ground black pepper
Preheat oven to 400F. Place a sheet of parchment paper in a baking pan. Slice the sweet potatoes into slices, place them in the pan on the sheet, and sprinkle the fries with cinnamon. Bake for 30 minutes at 400F. In the meantime, focus on the steak. On a cutting board, sprinkle the salt and pepper on both of the sides of the meat and pound the salt and pepper into both sides of the meat with a meat mallet. Grill the steak for 20-25 minutes total or until medium rare, turning once halfway through the cooking process. In the meantime, toss the greens with the vinegar and check on the fries. When the steak is medium rare when tested with a meat thermometer, the greens are tossed, and the fries are crispy, slice the steak thinly vertically across the grain and divide the food into four servings and serve.
