Ingredients

4 cup Ham, Spiral Cut, Hormel
8 medium (2-1/4" to 3-1/4" dia.) Potato, Raw
1 cup, Chopped Onions, Raw
1 cup Red Bell Pepper
2 tbsp Extra Virgin Olive Oil
2 cup Coconut Milk (Silk)
3 cups Low Sodium Chicken Broth
3 Tblsp Bob's Red Mill Gluten-Free Flour
1.5 cups Daiya Cheddar Style Shreds
0.25 cup Gluten-Free Bread Crumbs, Seasoned (4C brand)

Directions
Preheat oven to 400 degrees.
In a 13x9 casserole, add sliced potatoes and ham.
Saute onion, bell pepper, and olive oil in skillet until tender.
Add a small amount of chicken broth to flour to make a roux. Slowly add the rest of the chicken broth and milk. Stir until it starts to thicken. Remove from heat.
Pour over potatoes and ham. Top with cheese and bread crumbs.
Bake in 400 degree oven for 35 minutes or until the potatoes are cooked through.
