3/4 cup Hungry Jack - Wheat Blend Mix2/3 cup Polaner Sugar Free Apricot Preserves w/Fiber1/2 tsp Cinnamon, ground1/4 cup Pecans, finely chopped (divided)2 tsp Kroger Zero Calorie Brown Baking Sweetener
Preheat oven to 400°F. Combine pancake mix, preserves, cinnamon, and 2 Tbsp pecans, until smooth. Spoon batter into lightly greased mini muffin cups. Combine remaining 2 Tbsp pecans and brown baking sweetener. Sprinkle on top of and press lightly into batter. Bake 20 minutes or until toothpick inserted into center comes out clean. Turn off oven and allow to cool in oven w/door ajar for 2 to 3 minutes. Remove from pan. Serve with additional preserves, if desired.
