Ruby Tuesday's White Chicken Chili

Ingredients
6 Cups Cooked Diced Chicken Breasts6 Cups Low Sodium Chicken Broth1 lb. Great Northern Beans (soaked in water overnight)2 medium onions, chopped2 Jalapeno Peppers, seeded and dices.2 Chili Peppers, diced1 1/2 tsp. Oregano2 tsp Cumin, ground1/4 tsp cayenne pepper2 Garlic Cloves, minced1 Cup Salsa1 Tbsp. Olive Oil
Directions
Simmer beans, 1/2 the garlic and half the onions for 2 hours in the chicken broth. Make sure beans are soft.
Add Chicken and salsa.
Saute peppers, spices and remaining onions in olive oil. Add to Chili.
Simmer for an hour.
Serve with light sour cream or reduced fat cheese for added flavor!
