Roasted Beet Salad with Goat Cheese and Walnuts

Ingredients
Vinaigrette:1.5 Tbsp olive oil1 tsp red wine vinegar1 tsp balsamic vinegarSalad:3 roasted beets, slicedbeet greens from the beets, cleaned & spun mostly-dry1 shallot1/2 Tbsp olive oil1 oz goat cheese1/4 c toasted walnutssalt & pepper
Directions
Roast beets in 425 F oven for 60-90 minutes.
Saute damp beet greens & shallots in olive oil until greens are wilted. Plate.
Make vinaigrette.
Remove beet skins, slice beets & put onto greens. Dress. Top with crumbled goat cheese & walnuts.
