Slow Cooker V-8 Roast

Ingredients
1-2 lb Beef Roast (recipe calculated for a 2 lb roast and 4 servings)Salt, Pepper, Oregano, and Thyme to taste1 Cup Low Sodium V-8 (also good with spicy V-8)2 Cups sliced raw carrots1 Cup sliced raw onion4 Small new red potatoes, quartered
Directions
Slice and quarter vegetables, and place around bottom and sides of a slow cooker. Rub meat with seasonings, and place in the center of vegetables. Pour V-8 over all. Cook on high for 4-6 hours or until meat is cooked through and tender.
