Ground Turkey & Quinoa Skillet

Ingredients
1 onion chopped2 cloves garlic chopped 1 green pepper chopped1 lb lean ground turkey1 Tbsp Worcester sauce2 cans chopped tomatoes undrained1/2 cup beer1 Tbsp oilsalt & pepper to taste
Directions
Add oil to a large non stick skillet and heat on medium. Add onions, peppers and garlic and fry until onions are translucent and lightly browned. Add turkey and continue to cook, breaking up turkey. Add undrained tomatoes, beer and quinoa and stir to combine. Bring to a boil, then cover and cook on low 15 minutes. Uncover and cook 5 more minutes until most liquid is absorbed.

Serving Size: divide skillet into 4ths
