Guiltless Puppy Chow (vegan! high protein! high fiber! low sugar!)

2 cups fiber one honey squares (3/4 cup serving size)2 tbsp prepared PB2 powdered peanut butter1/2 cup homemade tofu chocolate mousse-pudding (use HALF of the recipe posted below)1 packet/1 scoop(around 20g) unsweetened, vegan protein powder1 heaping tsp stevia1 tbsp truviatofu pudding recipe:1/2 box silken lite firm tofu, like the kind by Mori-nu (refrigerated beforehand is best)4 tbsp cocoa powder (I use 3 tbsp dark, 1 tbsp regular)4 tbsp torani sugar-free syrup (I use 1/2 vanilla, 1/2 chocolate)2 tbsp unsweetened almond milkadditional stevia drops to taste
First, make the pudding by combining all ingredients in food processor until smooth. Sweeten additionally to taste if desired. Measure out 1/2 cup of the pudding and save the rest for a later use/snack :)
Second, pre-mix your PB2, and, in a separate bowl, whisk together your protein powder and stevia.
Third, measure your cereal into a medium mixing bowl. Stir together with pudding until completely coated.
Fourth, mix in the peanut butter and stir into pudding/cereal mixture until evenly distributed.
Fifth, sprinkle protein powder/stevia and truvia on top of the cereal mixture and stir again until well incorporated.
Put in fridge for 30min to harden. Mixture will be sticky...and addictively yummy when you taste it off the spoon.
Serve with some powdered xylitol if you want the white-dusted look of usual puppy chow, as the protein powder tends to blend into the chocolate pudding! And most of all: ENJOY.
