Mix-in-Pan Chocolate Snack Cake

Ingredients
1-2/3 cup unbleached white flour1/2 cup packed brown sugar1/2 cup Splenda For Baking (see note)1/4 cup cocoa powder1 tsp. baking soda1/2 tsp salt1 cup water1/3 cup canola oil, or similar1 tsp vinegar1/2 tsp vanilla extract
Directions
Heat oven to 350 F. Mix together dry ingredients in ungreased 8x8x2 inch cake pan. Stir in remaining ingredients until well combined, paying close attention to the corners. Bake about 35 or 40 minutes or until toothpick inserted in center comes out clean.

NOTE: Another 1/2 cup brown sugar can be substituted for the Splenda but will add to calories, of course.

Let cool for 10 minutes before cutting. Sprinkle with powdered sugar low fat whipped topping if desired.

Serves 8 modestly.

    Original recipe was great. I also made it modified for husband's health needs. I sub unsweetened applesauce for oil, used no vinegar, used splenda brown sugar, "NoSalt" in place of regular salt, and whole grain pastry/pie flour in place of unbleached flour. top

    I make a very similar recipe from Betty Crocker - always turns out great. I mix this recipe up by putting chopped nuts or coconut on top. We also cut this cake into 16 pieces (2"x2") - just enough to satisfy a sweet tooth. - 1/12/09

    i could not figure out why the sodium was so high. And that fact that noone mentioned it especialy. Finally checked the ingredient info and instead of saying 1/4 tsp. it says cups. wow what a difference a decimal makes. lol - 8/12/08
