Amazingly moist "almost" paleo coconut carrot muffin

2 large carrots (chopped)2 ripe bananas1/4 cup unsweetened applesauce6 organic egg whites1 tsp Braags apple cider vinegar1 tsp organic vanilla extract3 tbsp raw organic coconut oil (melted)2 cups almond flour2 tsp sea salt1 tbsp cinnamon3 scoops vanilla protein powder1/4 shredded raw coconut
In a food processor pulse chopped/peeled carrots. Add bananas, until no more chunks. Add applesauce, egg whites, vinegar, vanilla and oil, blend until smooth. Add all dry ingredients in batches, until completely incorporated. Stir in shredded coconut last. Spoon into greased muffin pan. They don't rise much, so you can fill almost to top. Bake at 350 for 25-30 min, until toothpick comes out clean.
