Gluten Free Lemon Bars

3/4 Cups Bob's Red Mill Gluten Free ALL Purpose Flour1/4 C Powdered Sugar3 TBS Pine Nuts, Toasted and coarsley chopped1/8 tsp Salt2 TBS Chilled Butter, cut into pieces2 TBS Grape Seed (or any) OilCooking Spray3/4 C Granulated Sugar2 TBS Bob's Red Mill Gluten Free ALL Purpose Flour1 tsp Lemon Rind1/2 C Lemon Juice2 Large Eggs1 Large Egg White2 TBS powdered sugar
Preheat oven to 350 degrees
Add flour, 1/4 cup powdered sugar,pine nuts, and salt into a food processor and pulse 2 times to combine.
Add butter ad oil, and pulse 3 to 5 times or until mixture resembles coarse meal. Place mixture into the bottom of an 8 inch square glass or ceramic baking dish coated with cooking spray and press into bottom of pan.
Bake at 350 degrees for 20 minutes, or until lightly browned.
Reduce heat in oven to 325 degrees.
COmnine granulated sugar and next 5 ingredients through egg white in a medium bowl, stirring with a whisk until smooth. Pour mixture over crust. Bake at 325 degrees for 20 minute or until set. Remove from oven, and cool completely in pan on a wire rack. Cover and chill for at least 2 hours, Sprinkle evenly with 2 tablespoons powdered sugar.
