No Potato Salad

Ingredients

Half head of cauliflower broken into bite sized pieces1/4 cup of diced raw zucchini (or celery)1/4 cup diced red onion, to taste1/4 cup diced pickle, to taste1/3 cup Olive Oil Mayo3 hard boiled egg whites, diced1 tsp yellow mustardsalt, pepper, garlic to taste
Steam chopped cauliflower until just tender, not mushy. (I do this in a Ziplock microwave steam bag, use any method you like) and run under cold water in a colendar, pat dry.
Mix all ingredients in a bowl until combined. Serve immediately or store in fridge over night.
Serving Size: Makes six 1/2 cup servings
