Mom's Chicken Strips

Ingredients
1 chicken breast2 tbs olive/canola oil blend1/2 cup crushed saltine crackers1 medium egg
Directions
Cut chicken breast into 6 strips, dip into egg, cover with cracker crumbs (can also use a little flour). Add olive/canola oil to pan and heat until bubbles appear. Add chicken to pan and cook 3-5 minutes on each side. Place on paper towel to absorb extra oil.

Serving Size: makes 6 strips (3 strips per serving)
