3.04 pound round rump roast (all visible fat trimmed)1/4 cup olive oil3 cups chopped white onion2 cups chopped bell pepper3 T minced garlic2 T chipotle pepper
preheat oven to 300 degrees. in a cast iron roaster, heat olive oil, add onions and bell pepper, cook until tender, add garlic and chipotel pepper, cook for about five minutes. remove the vegetables, place in a bowl. place the roast in cast iron roaster, brown on each side, add the vegetables, cover and cook for about two hours.
