Ingredients
Quinoa, Cooked with Water, 2 cupJalapeno Peppers, 1 pepper sliced*Extra Virgin Olive Oil, 1 tbspWhite Wine Vinegar, 3 tspFeta Cheese, .25 ozBlackeyed Peas 1/2 can, drained
Directions
Cook quinoa
add veggies, beans and cheese
add vinegar, oil, salt and pepper to taste
chill for 2 hours or overnight
