Mediterranean Vegetable Ragout

Ingredients
Sweet peppers (bell), 1 medium (approx 2-3/4" long, 2-1/2" *Peppers, sweet, red, fresh, .5 medium (approx 2-3/4" long, 2-1/2" Garlic, 1 tsp Onions, raw, .5 medium (2-1/2" dia) Red Ripe Tomatoes, 2 large whole (3" dia) Kale, 1 cup, chopped Lentils, .75 cup Zucchini, 2 cup, sliced Olive Oil, 1 tbsp
Directions
Chop onions and peppers, mince garlic. Chop kale. Cook lentils in water till done. Sauté peppers, onion, garlic and zucchini in olive oil. When soft, add kale. Chop tomatoes and add along with cooked lentils. Season to taste.
