Egg White Fritatta

Ingredients
8 oz browned Ground Turkey20 Egg Whites1 Medium Yam1 Cup chopped Mushrooms1 Small Beet1 small Turnip1 small OnionSpices as desired
Directions
Roast the vegetables at 400F for about 30 to 40 minutes until tender (I do this the day before).
Brown turkey meat and mix in roasted vegetables.
Spray a muffin tin liberally with cooking oil.
Fill tins with the roast vegetable and turkey mixture and top with egg whites.
Bake at 350F for about 30 minutes or until the egg white is firm.
