Sweet Potato Salad

Ingredients
4 small sweet potatoes1/4 cup mayo1T. mustard4 celery stalks, diced 1/4" thick1 red bell pepper diced 1 Cup fresh diced pineapple2 scallions finely choppedsalt and pepper to taste1/2 Cup toasted pecans, coarsely choppedChopped fresh chives for decoration
Directions
Bake potatoes in 400 degree oven for 1 hour. Cool. peel and chop into 1/2" pieces. Mix all ingredients except chives and pecans. cover and refrigerate at least one hour. Just before serving, fold in pecans and top with chives for a garnish.
