Berry Healthy Muffins

Ingredients
2 ½ cup Old Fashioned Oats1 cup Lowfat Greek Yogurt2 eggs½ cup Baking Stevia (or 1 cup sweetener of choice that measures like sugar)1 ½ tsp baking powder½ tsp baking soda2 cups strawberries (diced, reserve ½ cup)1 tsp lemon juice12 Muffin liners
Directions
1. Preheat oven to 400*F degrees. Line 12 muffin tins with liners.
2. Place all of the ingredients (except the berries) in a blender or food processor, and blend until smooth. Pour mixture into a medium size bowl, and stir in strawberries. Set aside the remaining ½ cup diced berries.
3. Divide batter among cupcake liners, and bake for 20-25 minutes, or until toothpick comes out clean.
