Ingredients
Italian tomato sauce, 2 cupsBeef broth, 2 cups Diced tomatoes, 1 small canZuchinni, 1 mediumYellow squash, 1 mediumRed or green pepper, 1 mediumBrown rice, 1 cup dryWater, 2 cups
Directions
In large saucepan, bring tomato sauce, beef broth and diced tomatoes, zuchinni, yellow squash and pepper to a boil. Add water as needed to cover the ingredients. Reduce heat, cover and simmer for 15 minutes. Add brown rice, cover and cook for an additional 15 minutes.
