Delight's Whole Grain Waffles

Ingredients
1/4 cup sunflower seeds, ground3/4 cup old-fashioned oats, ground3/4 cup whole wheat pastry flour1/4 cup unbleached all-purpose flour2 tablespoons golden flax meal2 tablespoons wheat germ1/4 cup Stevia in the Raw4 teaspoons aluminum-free baking powder1 teaspoon ground cinnamon1/2 teaspoon sea salt3 eggs, separated1 1/2 cups coconut milk2 tablespoons extra virgin olive oil1/4 cup unsweetened applesauce
Directions
Heat waffle maker. Combine dry ingredients in a large bowl, stirring to mix, then set aside. Separate eggs, placing whites in a small mixer bowl and adding yolks to liquid ingredients in a separate bowl. Beat egg whites until stiff, then using same beaters, thoroughly mix liquid ingredients and yolks. Pour into dry ingredients and beat until thoroughly combined (I use the same beaters used in beating the egg whites and mixing the liquid ingredients.) Gently fold the egg whites into the batter, using a spatula, DO NOT USE MIXER. Pour about 1 cup batter into waffle maker and bake according to manufacturer's instructions. Serve with sugar-free syrup or plain.
