Sauteed vegetables for Optifast Soup

Ingredients
4 cups chopped celery2 cups chopped onion2 cups chopped mushrooms1 pat unsalted butter
Directions
Melt butter in large sautee pan over med/high heat. Add chopped onions, stirring frequently. When beginning to softed, add chopped celery. Continue stirring until celery begins to soften. Add chopped mushrooms, stirring once or twice until cooked thru. Keep in refrigerator for one week. Heat 1/4 cup to add to Optifast Soup.
