Chicken Thighs Diablo

Ingredients
3 Tbs. soy sauce 2 Tbs. cornstarch 4 Tbs. dry sherry 1/2 tsp. ground ginger 1 garlic clove, minced 1/2 tsp. cayenne pepper 2 lbs. chicken thighs (remove skin if desired) Paprika
Directions
Combine soy sauce & cornstarch in 8" baking dish. Stir well & add sherry, ginger, garlic & cayenne.

Place chicken in dish and coat with soy mixture. Cover with wax paper. Microwave on HIGH 6 minutes.

Turn pieces over, stir sauce & spoon over chicken. Sprinkle with paprika. Cover again & microwave on HIGH 6-8 minutes.

Rest 5 minutes, spoon sauce over chicken & serve.

    I don't like microwaved meat. Chicken thighs are forgiving of starting in a pan, then finishing in the oven. Spicy and great! - 2/18/20

    Very tasty! I'm not a fan of microwaving my meat, so I baked in the oven for 1 HR at 350 uncovered. Also removed the skin first, and used 3 cloves of garlic. Will definitely make again! - 2/10/20
